Description
You will be working in a multi-cuisine buffet restaurant and will report to the Head Chef. This job requires at least 5 years experience in a Specialist Chinese Chef role and an NVQ skill level 3 and above. Such skill and experience is needed to provide the innovative, authentic and artistically superior Chinese starters, main courses and desserts that we will expect you to produce. You will be required to co-ordinate, plan and supervise the smooth running of a section of Chinese cuisine in accordance with pre-assigned shift, ensuring consistent, high quality production of food. You will also need to develop a menu to maximise quality and from such a menu, set targets of sales, and to plan and manage portion control, minimising wastage. You will need to be comfortable with adapting dishes to take account of seasonal produce and be willing to learn further culinary skills under the stewardship and direction of the Head Chef. Importantly, you will need to be comfortable interacting with customers and improvising dishes (such as stir fry) to their requests and preferences. You will be required to attend daily briefings and meetings where new dishes are trialled. The job involves working evenings, weekends, some late nights and public holidays.
